A prototype is an early sample or model built to test a concept or process, or to act as an example to be replicated or learned from. During early stages, you can build low-fidelity paper prototypes with pencil and paper to validate concepts or flows. Later on, with flows and concepts validated, you can use design software to build a high-fidelity prototype. These prototypes will look like apps on your mobile device, and can be used to fine-tune details of the user interface.
